Alebrije is a Mexican restaurant that is rooted in tradition and the true flavors of Mexico. They have a milpa to table philosophy which means they are sourcing as many ingredients as possible from traditional milpa farmers in Mexico. All of their corn and beans are of heirloom varietals which have been grown in Mexico for generations.
Their meat is sourced locally and so is as much of their produce as possible. When you eat at Alebrije not only are you tasting the true flavors of Mexico ; you are also eating fresh meats and produce that are sourced responsibly.
The ambiance and décor at Alebrije was also sourced responsibly from Mexico or was built in house by traditional Mexican craftsmen. Even the tables and chairs were built using traditional techniques at the restaurant. They consider themselves not just a food organization, but also an organization that provides education about Mexican culture and art. Alebrije is a concept that is completely new to Iowa and we are excited to share our knowledge with you!
The owners, Miriam and Fernando Weber, have a passion for food and hail from the states of Jalisco and Chihuahua Mexico. They moved to the Iowa City area approximately 5 years ago and are very excited to be sharing Alebrije with you. They have carefully crafted all of the recipes for the restaurants, and have perfected many of the traditional Mexican techniques throughout their travels and their experiences with cooking Mexican food for the entirety of their lives.
